Vegan Cottage Pie

With it being January, I thought I’d give you an easy and home-y recipe that you can make during this month of Veganuary. When making big health-related changes, like going vegan, something that can help make it easier is making the changes as small as possible. A cottage pie is still a popular dish that can easily be made vegan.

Ingredients

  • 5-6 white potatoes

  • 1/2 white onion

  • 300g Quorn mince

  • 1 carrot

  • Your choice of vegetables (I chose 1 cup of frozen peas and sweetcorn)

  • 1 bouillon cube of your choice

  • 1 pinch each of mixed herbs, paprika and oregano

  • 1 tablespoon of soy sauce

  • 1 tablespoon of Worcester sauce

  • 1 teaspoon tomato puree

  • 1/2 cup lukewarm tap water

  • 1 tablespoon plain flour

  • 1/2 cup alternative milk of your choice

  • Vegan cheese/nutritional yeast flakes

Method

  1. Peel, wash, and put your potatoes on a boil while you prepare the next steps.

  2. On a pan, add a splash of oil and put it on medium-high heat. Add in your finely chopped onions. Allow these to cook for 3-5 minutes until they’re cooked through and soft.

  3. Once the onion is soft, add in your washed, peeled, and cut into rounds carrot. Cook until soft.

  4. Add your Quorn Mince into the pan now. You may need to add another splash of oil again to prevent it from sticking to the pan.

  5. Once everything is soft, add in a cup of whatever vegetables you like, I chose peas and sweetcorn, into the pan and stir.

  6. While that’s cooking, make your stock. Boil 1 pint of water and add in your bouillon cubes and let it dissolve. Add this to your pan, careful of splatter. Add your Worcester sauce, tomato puree, soy sauce, and herbs and spices into the pan now.

  7. Allow this to cook through thoroughly for 10-15 minutes.

  8. Now to thicken things up, you will need to put lukewarm tap water into a cup. Add in a butch tablespoon of flour and whisk until combined. Ensure there are no lumps. Slowly pour this into the pan while stirring it in to combine. Do this until it has reached your desired consistency.

  9. Now your potatoes should be thoroughly cooked. Drain and mash them using your alternative milk.

  10. Pour your Quorn mince mixture into a baking tray and even it out flat.

  11. Scoop your mashed potatoes on top, flatten gently and use a fork to fluff up.

  12. Grate vegan cheese/sprinkle it with nutritional yeast and place in the oven at 180 degrees Celcius for 10-12 minutes or when the top begins to golden-brown.
