Sweet Potato Frittata

This is a super delicious, nutrient rich snack you can meal prep and have as an option throughout your week.

Method

  1. Grate your sweet potato, zucchini and cheese and place everything into a bowl

  2. Add 2 eggs, seasoning and sweetcorn. Mix thoroughly and if it’s very wet, add a sprinkling of flour to help absorb it. A wet mixture will make soggy frittatas.

  3. Fry it off in a medium hot pan and make sure they’re thin enough to cook through.

  4. In the meantime, you can make the dip. Add a spoonful of yoghurt to a bowl and the amount of lemon juice and garlic you’re happy with - give it a taste!

Ingredients

Fritters

  • 1 Sweet potato

  • 1 Zucchini (courgette)

  • Handful of sweetcorn

  • 2 eggs

  • Flour (optional)

  • Cheese (optional)

  • Oil of your choice for frying

  • Seasoning - salt and pepper

Dip

  • Greek yoghurt

  • Garlic clove

  • Squeeze of a lemon
