Sweet Potato Frittata
This is a super delicious, nutrient rich snack you can meal prep and have as an option throughout your week.
Method
Grate your sweet potato, zucchini and cheese and place everything into a bowl
Add 2 eggs, seasoning and sweetcorn. Mix thoroughly and if it’s very wet, add a sprinkling of flour to help absorb it. A wet mixture will make soggy frittatas.
Fry it off in a medium hot pan and make sure they’re thin enough to cook through.
In the meantime, you can make the dip. Add a spoonful of yoghurt to a bowl and the amount of lemon juice and garlic you’re happy with - give it a taste!

1 Sweet potato
1 Zucchini (courgette)
Handful of sweetcorn
2 eggs
Flour (optional)
Cheese (optional)
Oil of your choice for frying
Seasoning - salt and pepper
Dip
Greek yoghurt
Garlic clove
Squeeze of a lemon
