Chocolate and Raspberry Fridge Cake

This is a super easy (4 steps!) and fun recipe you can get the kids involved in making! It can also be made vegan with a few simple swaps!

Perfect as a meal prep recipe to make a sweet snack for the week.

Ingredients:

  • 250g digestive biscuits - (Vegan swap - oaties)

  • 300g milk chocolate - (Vegan milk chocolate)

  • 300g white chocolate - (Vegan white chocolate)

  • 150g fresh raspberries

  • 100g butter - (Vegan butter)

  • Optional - sprinkles

Method:

Step 1 - Put the digestive biscuits in a baggie and break them up into little chunks. Place them into your pan. You can have the kids do this while you melt the milk chocolate over a small amount of boiling water in a pot on the hob.

Step 2 - Melt the butter and combine the biscuits, butter, half the raspberries, and milk chocolate together in the pan. Press down with a flat spatula to even the surface.

Step 3 - Melt the white chocolate the same way as before and layer it on top of the mixture in the pan.

Step 4 - Place the pan in the fridge for a minimum of 2 hours. Once it has set, decorate with the rest of the raspberries and sprinkles.
