Meatless Meatball Sub Sandwich
Here is a super quick, easy and delicious lunch idea. It’s perfect for meal prep also!
Ingredients
1/2 onion
Meatless meatballs
Marinara sauce
1/2 red bell pepper
Sweetcorn
Lettuce
Butter
Baguette
Cheese
1 tsp oil
Methods
Saute the onions in a pan until soft
Add the meatballs until they’re showing signs of crispiness
Add the marinara sauce.
Add in your veggies and cook until they’re all cooked.
Assemble your sub and enjoy!
Swaps
If you prefer to use meat-based meatballs go ahead!
You can swap out any of the veggies. I like to sometimes add spinach or mushrooms into the sauce or pickled gherkin as a topping.
I used Nutritional Yeast because I ran out of cheese, but they can often be used interchangeably!
